Carbs in nutrition databases are always overcounted, especially for fermented foods. Fermentation is when bacteria and yeast eat carbs and produce things like lactic acid and acetic acid (vinegar).

But the way carbs are counted doesn't differentiate between these. Vinegar, fiber and sugar are all treated exactly the same. They're all counted as carbs: 4 calories per gram.

This is very clearly not realistic. And because fermentation is largely a one way process, real, digestible carbs only decrease over time fermenting.

So how many carbs are in your fermented foods? Unfortunately, they've muddied the statistical waters, and the number would always be decreasing anyway. Suffice it to say far fewer than are listed in any database.

So don't be afraid to include fermented foods in your low carb diet. They have many benefits, and usually are quite low carb, especially for a longer duration fermentation.
